I wonder if there will even be a point to leveling up your character and switching armor and weapons around on each character. Or will the required items be placed on your character when you start each episode? Will special boss fights that are outside of the story still be there?

Not surprised at this. It will probably mean we get content earlier, which is a good thing. If they released it altogether we wouldn't get it until 2022.
