Paul McCartney lived till his 80s while Elvis died in early 40s so they had several more decades to promote themselves. I actually like a few Elvis songs while I only like 1 Beatles song.
I don't think Stones or Beatles transitioned out.Not an expert, but they went from Twist and Shout to Yesterday. And then they started getting into more psychedelic rock sounds.
Also, a lot of white artists that start with Black music, eventually transition out.
Do not be surprised if Eminem puts out a non-rap record, if he hasn't already.

Beatles popularized and revolutionized music production techniques like sampling.
Elvis bit and did nothing else.
Beatles were so popular they were afforded the ability to experiment to do whatever the fukk they wanted and gave back to music in spades.
Elvis doesn't have a single song as good as this.
Listen to music before The Beatles, then listen to music after The Beatles. That's why. Say what you want about them, but The Beatles practically created modern music. It's like how The Simpsons influenced modern humor. Watch The Simpsons in its golden years and you'll see just how far ahead of the curb it was compared to other TV comedies of its time.
