The first time I played Majora's Mask after going through OOT and I saw how ominous and dark it was from the beginning had a young breh shook but I was addicted to playing it.

Also Street Fighter 2. I had never seen fighting games before and always played games like Double Dragon or Final Fight and thought it would be fun to play against each other and then my pops brought home SF2

Mario 64 - I mean... wow, 3d world. it was magical.

Goldeneye 007 - I became entranced by this game. Literally a life defining moment for me.

NARC(arcade version) - It would my first "violent" game. Played it at some "future of gaming" expo in Manhattan when I was a kid. I looked for this game(my father looked). I think we finally got it on Nintendo or something.

Zelda: Ocarina of Time, Halo:CE, Call of Duty 2(That D-Day scene) are honorable mentions.
