Therefore, a lot of the meals I'm going to post are drained of fat and low in calorie count.
Just taking the time to share with you guys.
My recipe's will be attached as well <3
Tonight I made Pineapple chicken "farritos".
fajita and burrito united :D
Ingredients needed:d
-2 skinless boneless chicken breasts
-1 can pineapple chunks
-Tortilla wraps
-Rice
-1/2 green pepper
-1/2 red pepper
-1/2 yellow or orange pepper
-1 small onion
-shredded cheddar (optional)
-Salsa (optional)
-Flour
-Cumin
-Salt
-Ground Pepper
-Onion powder
-Sugar
-Garlic powder
-Cayenne
-Paprika
Go ahead and heat up about 1-2 tbsp of olive oil on medium high,
Dice up your chicken breasts and add to skillet.
While your chicken is beginning to cook, Cut up your veggies
and measure about 2/3 cup of pineapple chunks :D
Now mix the chopped veggies into the skillet with chicken, mix, and cover.
Allow to simmer while you prepare seasonings.
Grab your measuring spoons and begin pouring the seasonings into the measuring cup
of pineapple chunks you've already prepared.
1 tsp flour.
1 tsp ground cumin
1 tsp salt
1/2 tsp ground pepper
1/2 tsp onion powder
1 tsp sugar
1/4 tsp garlic powder
3/4 tsp cayenne
1 tsp paprika
Now whisk it together until it forms a firmer consistency...
Once done mix it in with the sautéing mixture. Reduce heat to medium, and cover.
Now, eating it as a burrito is optional, you can also mix it in with salad or eat over rice as a stirfry.
I'm just lazy and decided wrap it was. Of course, the easiest way to work with a wrap/tortilla, is to warm it up.
Go ahead an heat up 1/2 tsp olive oil and spread with papertowel.
You'll know when its warm enough to manipulate. about a minute or two on both sides.
Afterwards, go ahead and take your rice you've cooked as well, (or you can eat without rice.
I didn't include make rice in the steps because I didn't think it was something I had to explain lol).
but go ahead and scoop one serving spoonful onto 1/3 of wrap.
then add chicken and peppers.
Some shredded cheese or salsa doesn't hurt either ;)
Optional of course.
Now wrap it up and place back into greased pan to seal the burrito itself.
1 farrito with a serving size of each should be pretty fufilling.
A side of salad is pretty yum too
But like I said, I'm not big on calories, so 1 Smiley farrito = 326 calories ^_^
Nommmmmmmmmmmmmy.
326?
