Simply spray a muffin pan with olive oil cooking spray or wipe down with Olive Oil
crack an egg into the cup, add seasoning and a few bits of leftover vegetables.
350 degrees for approximately 10-12 minutes
you can also freeze them

BBQ Chicken Sandi
8 oz ground chicken, bbq sauce, paprika, cayenne, pepper, garlic + spinach/onion/goat cheese on sandwich bread. shyt was fukking awesome....wanted to eat another immediately
The ingenuity of using double sandwich thins
Made a stir-fry. I used chipotle taco seasoning and the juice of two limes to marinate the chicken. I added cilantro to my brown rice and served the stir fry over it. Not bad...a little spicy.

Pecan encrusted salmon with a honey Dijon mustard sauce (not my original recipe, but I made it mine own). I normally eat it with Dijon spinach and low carb pasta (these are collards in the pics though).
1/4 cup honey Dijon mustard
1 tablespoon of honey
2 tablespoons of I can't believe it's not butter
Brush the salmon with the above mixture, sprinkle a mix of bread crumbs & crushed pecans, and bake for 12 minutes at 450.
It is a good idea to make extra sauce and drizzle some on the salmon as soon as you take it out of the oven.
Sauté some spinach with a little Dijon mustard and enjoy (my bf literally loves this recipe. He had me cook two whole salmon within a 3 day period one time).

The food below may not look that appetizing; however, it tasted just like regular spaghetti (I made it the other day).
I made "noodles" out of peeled zucchini (I literally used a vegetable peeler on the zucchini until I got to the seeds). I made my meat sauce like normal with ground turkey. It was a good pasta alternative (which I doubt you guys care about...carbs that is).
I been meaning to pick up a vegetable peeler just to make zucchini noodles..
