Thanos wanted to kill half of the universe to provide balance so when he snapped his fingers with the gauntlet half of the population of the universe died.

My best guess is they utilize the quantum realm through Ant-Man's tech. There is no time and space in the quantum realm so they might be able to go back

half die, half survive...Thanos mentioned it many times...they even showed an example on Gammora's home planet (everyone on the left was killed, everyone on the right were allowed to live)
