I’ve got some brisket in the freezer, I’ve been scared to do it, I don’t want to mess it up.
Only one way to learn. I know you do your thang but you probably gone mess up the first few times than like magic :ohlawd:

Them whole briskets expensive up north so I separated the point and flat to get a few attempts early on.

The older I get the more I realize nikkas taste buds be fked up. For the 4th I went over one of my dogs crib (he was talking a gang of shyt) and he pulled out the aluminum foil to grill on top of. I was like wtf. That's something you might try at a public park grill not at home. shyt was tasting like kerosene. Naw I'm straight dog I ate before came.

I'm bougie as fk on the grill we off that lighter fluid round here.

BBQ is one of the few things where a video can't help you. Different grills/smokers, different wood/charcoal, diff temps, diff types of ribs, diff rubs/sprays.....any one of those things change and the outcome is wildly different.

BBQ is a skill not many people can do. Alot of people THINK they can do it, but they quickly find out that shyt aint as simple as following a recipe.
Hot dogs are a good starter test, because if u fukk that up then you don't belong anywhere near a grill.

Summer time is winding down here so I may slow cook it or sous vide it and use it to make ravioli, ragu, bao buns, or stuff it into pastry. If I get blessed with another warm sunny day I may still smoke it and then do all that shyt with the left overs. We’ll see.

But if I smoke it I’m gonna go with the snake method; that worked quite well last time, plus my grill is one of the small round ones so I can’t offset as much as I would like to.

TBH I think that you need to start a bit more advanced than hot dogs. You need to feel the pain of something you really wanted and fukked it up to want to do better. I know it sounds fukked up, but hot dogs are a cop out. I get what you mean tho but no real lesson is learned from collateral damage.

The first thing I tried to make on the bbq was jerk pork, it was like ripping at shoe leather because the connective tissues hadn’t broke down enough. There was a lot to learn about grilling in that one attempt and That shyt burnt my soul. If it was hot dogs I would have been more “meh” as it doesn’t teach me anything about real meat.
Maybe chicken wings, that you cleaned and marinated yourself, that will teach you a bit about temp management, offsetting, flame management, where to put the valve for the best smoke management etc.

I’m sure that using a gas grill is different to coals. I’ve only ever used coal. Mostly lump wood and sometimes briquettes and then I’ll chuck in wood chips or lump fruit wood.

How do pellets work?
How does a gas grill differ to coal?
What different gases do you uses, propane and butane? I don’t think we have that here.
Grills are super expensive, I don’t wanna spend a grand on a bbq so I’m sticking with what I’ve got.

Grills are super expensive, I don’t wanna spend a grand on a bbq so I’m sticking with what I’ve got.

Did our 1st full packer brisket on a pellet smoker last weekend. The pellet smoker my friends has gets the heat from the bottom like an induction stove. The pellets are there for smoking and flavor, it removes all the guess work of charcoal. For a first try that brisket came out amazing.
