TBH I think that you need to start a bit more advanced than hot dogs. You need to feel the pain of something you really wanted and fukked it up to want to do better. I know it sounds fukked up, but hot dogs are a cop out. I get what you mean tho but no real lesson is learned from collateral damage.
The first thing I tried to make on the bbq was jerk pork, it was like ripping at shoe leather because the connective tissues hadn’t broke down enough. There was a lot to learn about grilling in that one attempt and That shyt burnt my soul. If it was hot dogs I would have been more “meh” as it doesn’t teach me anything about real meat.
Maybe chicken wings, that you cleaned and marinated yourself, that will teach you a bit about temp management, offsetting, flame management, where to put the valve for the best smoke management etc.
