Which kettle grill do you have? I got a few grills but learned that my kettle one is the GOAT for long slow cooks like brisket if you're not doing 30 pounds or something crazy. It's super efficient (charcoal wise) and can do a great job.I've only done a brisket once, just for myself. Fukked it all up because my dumbass didn't have a thermometer yet and I was trying to do it in the kettle w/ the snake method. The point came out decent but the flat was straight shoe leather, had to throw half of it away. That bytch was like $80 and I spent all day, I was so mad at myself.

For brisket in that kettle I use the offset method instead of the snake method. I put all the coals in one side, then put a tray of wood chips and water above it for moisture. Then I add a mixture of wood chunks and wood chips directly to the coals during the cook to get the smoke. That method also lets you quickly add more coals without having to move the brisket.
Most of it is a combination of skill, patience, and not overthinking it.

one thing i noticed about ppl that cant cook is that they shift priorities while theyre trying to do it. that shyt should be A#1 until its done, esp if you feeding other ppl. esp how much food costs. turn off that damn playstation
