It's a lot of work to get it right but once you do you're in business and it is easy to do going forward

I've only done a brisket once, just for myself. Fukked it all up because my dumbass didn't have a thermometer yet and I was trying to do it in the kettle w/ the snake method. The point came out decent but the flat was straight shoe leather, had to throw half of it away. That bytch was like $80 and I spent all day, I was so mad at myself. :gucci:

Which kettle grill do you have? I got a few grills but learned that my kettle one is the GOAT for long slow cooks like brisket if you're not doing 30 pounds or something crazy. It's super efficient (charcoal wise) and can do a great job.

For brisket in that kettle I use the offset method instead of the snake method. I put all the coals in one side, then put a tray of wood chips and water above it for moisture. Then I add a mixture of wood chunks and wood chips directly to the coals during the cook to get the smoke. That method also lets you quickly add more coals without having to move the brisket.

Most of it is a combination of skill, patience, and not overthinking it.

Sometimes brehs are out there running their mouth about how they are going to throw down on the grill making sure EVERYONE knows who is working the grill tonight. Whole time food over there getting extra grizzly :mjgrin:

I got a 22" Weber kettle. I smoke good ribs with it using the offset method. I don't know why I went snake, I guess I was reading too much about how it's good for really long cooks.

I got an 18" smokey mountain a few months ago that I've really been enjoying.

I learned from Google. If you follow the instructions exactly it's hard to fukk up. My shyt comes out buttery especially steak.

one thing i noticed about ppl that cant cook is that they shift priorities while theyre trying to do it. that shyt should be A#1 until its done, esp if you feeding other ppl. esp how much food costs. turn off that damn playstation

This.

I grilled on the 4th. Hadn't grilled in years and it was a ton of food I had to cook for me and bout 6 other people.. Plus it was on a brand new grill (that I had to assemble)

fukkin ribs, chicken, burgers, shrimp kabobs, lobster tails, dogs..

I sat in front of that mf whole time, didn't do shyt else but sit there and get up to turn em every few mimute


All the food came out immaculate :whew:
