I didn't use any flour for these. Instead used oat flour, ground flax seeds, and protein powder.


@VFib You said you wanted some ideas for vegetarian meals and this was very simple to make.

Basically all I did was bake a potato and stuffed it with a ton of veggies (kale, beans, corn, onions, tomatoes), and finished it with greek yoghurt and hot sauce.

So I was just messing around in the kitchen trying to figure out some to do with the veggies i bought last week. I bought some kale, jalapeño peppers, green onions, and grabbed some frozen pea pods out the freezer. I rinsed my veggies & drizzled some ACV on them & melted down some coconut oil. Once melted I added my seasoned veggies (used lemon pepper & some Italian seasoned parmesan cheese) & diced up some chicken sausage to the mix too. After letting it cook for 15-20 min it was ready to eat!! I threw in a boiled egg too.


Sorry no pics taken, it was my first time making this. But it was very delicious & filling. Pictures will be taken next time.

Also, make it when no one else is around. If you have someone with a nose for unpleasant food smells ( it was the chopped green onions that gave it away) wait til hey are gone so you won't hear any :angry:


Oh by the way I have an excellent smoothie recipe (one of many) to share!!!! This time I do have a picture to go with it. Let me rinse my kale & put it in a freezer bag first.

That Good Purple Drank/Triple Berry Blend:
Ingredients:
  • Strawberries
  • Blackberries
  • Raspberries
  • Honey
  • Greek strawberry yogurt w/ fruit at the bottom
  • Orange juice
(I prefer fresh pineapple juice with all of my smoothies but I use it when there is none.)


Start with rising the fruits and adding them in a blender. Then mix the yogurt so the fruit at the bottom is blended in & scoop the yogurt into the blender. Squeeze about 2-3 tables spoons of honey (I love honey!!) and blend!

Is this a sweet potatoe? And did U use brown rice? Did you season it with anything particular? Does the Greek yogurt work as a sour cream substitute? I don't eat sour cream anyway but this looks really yummy! :drool:

Yes it's a sweet potato. I didn't use rice but that's an option. I seasoned with sea salt, paprika, cumin, and black pepper. I always use plain greek yoghurt as a substitute for sour cream because it's "healthier" and one of my staple foods. I also like that it's plain because I can play around with the flavour by adding additions to compliment both sweet and savoury dishes.
