I love quinoa and it's so easy to cook, one of my favorite things to make with it is quinoa fried rice. Sometimes with meat but usually without.

INGREDIENTS
  • 1 cup quinoa (or 2½ to 3 cups leftover cooked quinoa)
  • 1 ½ cups water or low-sodium chicken stock
  • ¼ small onion, chopped
  • 2 carrots, peeled and chopped
  • 3 scallions, chopped and divided
  • 3 garlic cloves, minced
  • ½ teaspoon fresh ginger, minced
  • 1 tablespoon olive oil
  • 2 eggs, lightly scrambled (still raw)
  • ½ cup frozen peas, thawed
  • Sauce:
  • 1 ½ tablespoons teriyaki sauce
  • 2 ½ tablespoons soy sauce
  • ¾ teaspoon sesame oil

INSTRUCTIONS
  1. Rinse quinoa a few times in cold water.
  2. Bring quinoa and water or chicken stock to a boil in a medium saucepan, and then reduce to a simmer. Season with salt.
  3. Simmer for 15-20 minutes until quinoa is fluffy and cooked through. Remove from heat and let set for five minutes or so. Fluff with a fork.
  4. Cool and store in the fridge, preferably overnight.
  5. Mix teriyaki, soy sauce, and sesame oil in a small bowl. Set aside.
  6. Heat ½ tablespoon olive oil in a large sauté pan over a high heat. Add onion and carrot, cook about two minutes. Add 2 scallions, garlic and ginger to the pan. Cook another two minutes. Add in the rest of the olive oil and the quinoa. Stir-fry about two minutes. Add sauce and stir-fry until incorporated, about two minutes. Make a well in the center of the quinoa pour eggs in, scramble. Throw in peas, then toss everything together until the peas are warmed through, add remaining scallion and serve.
Pinterest has a lot of great recipes or even just googling. I've been wanting to try something different so the Buddha bowl recipes have my interests for now.

So I'm trying out a bunch of new recipes this summer, will share (pics) as I go along. Not necessarily "healthy" but I'm definitely exploring substitutes for carbs. This week is swordfish and cauliflower stir fry - brussel sprouts, carrots, red onions and garlic.

edit: came out really good, first time eating swordfish

Looks really good. I love seafood :mjcry: I found out a few months ago that I'm allergic to salmon.

I keep debating on if I should just give up meat for good. I just don't know, I did it before and it wasn't as hard as i thought it would be.

I can't believe our mango trees are so tall already, they're literally 3 years old. You don't even notice when they're growing :wow:
And our pineapples :blessed:

:ohhh: Quinoa cooked with a lil salt, pepper, cayenne pepper and garlic taste good as fukk with some Parmesan cheese melted on top. You don't even need anything else to accompany it.

High fat low carbs is not only great for keeping blood sugar levels low but it's also suppose to be great at balancing hormones. Probably the second reason I decided to try it. Ever since I tried going on birth control a few years ago my hormones have been fukked up. For a while I had no sex drive; like absolute zero. I got better maybe a year after I stopped but still low. Once it started improving I figured it was go back to normal but it never did. I would say from a scale of 1 to 10 maybe a 3. Birth control really fukked me up. I use to have constant "tingle" that was always there. It's level of intensity varied to not really notable to almost unbearable (in a good way). But after the BC it was nonexistent.

Anyway I've been on my HFLC diet for 12 days and as I was cleaning the house today I dare say...:wow:...the "tingle" returned. I swear to God I didn't move for like 5 minutes just so I didn't "mess it up" :russ:. Now that joint is on full blast and been that way for the last hour! OMG I am so happy I could cry but I'm too horny :shaq:. I feel like a normal person again. I had seriously forgot this feeling I swear I did. Damn it's great. The only bad thing...no man in sight:beli:. It's probably for the best. :heh: I'm so happy. It's literally been YEARS since I have been horny. Birth control is seriously the devil. HFLC is a gift from GOD (for me).

A tomato plant randomly grew in the front yard. I don't like taking care of plants so if it can't live on its own I'll just cut it off.
