Competitive battling with the ranked battles. That’s where the strategy comes in, then it all makes since. I haven’t had this much fun playing Pokémon since red and blue. This might be the best game I’ve played in years

The only place I think you can get ditto is in the wild area across the lake of outrage on the island with all the evolution stones and those require the 7th gym badge and even then you can't catch most of them.

Also there's a raid spot that you have to drop wishing stones into by the nursery in the wild area. It mostly spawns ditto.

I just finished the Gym Challenge, should I go grind/level up my Pokémon (got some 60s from trades and some 30s/40s) before I even think of attempting the Champion Cup? Or will it let me leave inbetween cup battles to grind?

Been doing the poke jobs after getting the badges and if you use the right Pokémon for the job and do like a days worth of time and you can level up like 8-9 different pokemon at once with significant gains
