I beat the entire game with with the same 3 or 4 guns I got a few chapters in.
Just use whatever you like. The game adapts to your play style. I'm sure if you look online you'll find a list of OP guns but it honestly doesn't matter.
There isn't so much emphasis on the type of gun. The game is more about how you approach each situation.
If you want something OP get silenced tranquilizers and have Quiet equipped the same way.
I'm still stuck fighting the metal gear in the canyon after meeting skullface 
I guess i have to buy a suped up rocket launcher to kill because once i get it down to like a quarter of it's life, its goes blitzwing on my ass.

Same happened to me.... over and over.... I got so frustrated I went the “chicken hat” route and just said fukk it
Got tired of like you said getting close to killing it then getting fleeced by the game on some last moment heroic shyt.

Maaaan when I read what I read to finally find the truth out after you beat level 43 or whenever you fight the robot the first time.....
I said fukk that.....
Just didn’t feel like being forced to do so much shyt again.
I saw the aftermath preview of the “sequel”
In my head..... that’s the ending of the game and I didn’t go further.
Maybe one day but for now Na..... that shyt was disappointing after having this game on hiatus for so many years and picking it up to see this

Niccas when you die the next 2 or 4 times.....
And the game ask you “Do you want to wear the chicken hat?”
Just say YES
You’ll beat him in the next 1 or 2 chances

Still the goat game, I put 180 hrs in it the first month
Had to delete this from my hard drive for a while, I thought I was legit addicted
Endless variations in loadouts and buddies can change it from a a pure stealth, from an action game, to a bullet sponge tank, to a futuristic super spy and the best thing is you can switch between styles in about ~30 seconds each switch. I would hate to be an uncreative nikka playing this game because you could get caught up doing the same things every mission instead of playing against some of the best AI with the best controls probably ever.
