I breaded some chicken wings in crunched up potato chips. :yeshrug:

I really wanted to use those doritos in the purple bag? those sweet spicy chili. Grocery store was out. In all honesty, they needed salt. For some plain ass wings, they look extravagant, though. Between chicken, fish, chips, corn chips and dorito joints, that's a million different quick and easy flavor combinations. lol

Could you share your jerk chicken recipe :ohlawd::ohlawd:

I found the recipe from The Caribbean Pot.
5 scallions (green onions)
5 sprigs of fresh thyme (about 1 tablespoon chopped)
2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon brown sugar
2 teaspoon ground allspice
1 teaspoon nutmeg
1 teaspoon cinnamon
2 scotch bonnet peppers
1/3 cup soy sauce
2 tablespoon vegetable oil
1/4 cup vinegar
1 onion
1/2 cup orange juice
2 cloves garlic
1 teaspoon grated ginger

Notes: If you’re using dried thyme, use about 1/2 table spoon. This makes about 3 cups of marinade and it can be stored in the fridge for about 1 month.

Basically all you’ll be doing is making a puree with all the ingredients I mentioned above. So you’ll need a blender or food processor.

In the past I've used Grace's Jerk seasoning.

  • Soak chicken overnight in a brine (approx 16 cups, 1/2 cup salt, 2/3 cup sugar).
  • The following day, rinse off brine and season with salt (not too much because its been soaking in the bring solution) and the jerk sauce and let it marinade for at least 3 hours.
  • Baked at 350˚F for 1 hour covered (skin side up if doing pieces ) then uncovered for another hour at 400˚F.
*I baked a whole chicken so it took a bit longer than if I was to do them with individual pieces
