Man I was out there in May or June '14 and I promise you my dads BBQ completely shyts on Gates.


South Carolina's mustard based is the most unique because I don't like mustard and that shyt banging.:wow:

I was born in NC and I can't even rock with that mustard based joints. After you've been exposed to TX and KC BBQ, it's pretty a much a wrap on that end. My folks in KCMO actually ship over some Gates sauce for me when I need it.

I don't like mustard on anything fam and I've had KC style in KC, I lived in Texas, I lived in South Carolina and I've visited Memphis numerous times. The sauce from that restaurant shyts on anything I've had sauce wise from anywhere else. I will admit Texas had the best tasting meat. :hubie:

They aren't the same. I have family in Nashville in Memphis. Been eating it since I was a jit at least every summer or too not including weddings and funerals. When I think sweet southern heat I instantly think of Memphis. KC is about thick sauces. Whether it's spicy or sweet or sweet and spicy think of KC Masterpiece. Theres a reason it's KC and the restaurants are there. Those are a selection of thick sauces that pretty much can go on anything you can think of. Bryant's has their sauce, Gates has their sauce. KC is sauce Town. Youve never heard someone say I want some KC chicken or KC ribs. People all the time want Memphis pulled pork or chicken.

I lived in KC for years and I'm a sauce head. I love a good sauce. So much I can dismiss improperly cooked or smoked meats cause if your going to drench it in sauce at least the sauce should be bomb.

When you say you don't like mustard are you talking about as a conduit (to get the rubs / seasonings to stick to the meat?).

It's the best especially for beef. Mustard, real mustard Colemans not French's has some heat, some vinegar it draws the flavor of the meat. It won't taste like raw mustard on a hot dog or shouldn't. Most places even in TX will use mustard as a conduit. That or Louisiana. Some places experience with mayo (which is pointless they are just trying to be different and in.). Others might use straight olive oil.

Good thread... first off... yall gonna stop shyttin on the Carolinas' 'cue :ufdup: ... Lexington style/336, tomato based has been the staple for me, but Vinegar based has become my go to. Mustard based in SC is an acquired taste, but still quality in its own right. Word to @Sleepy Walker

And for whoever said we rely mostly on the sauce must have an immature palate. the length and method of smoking and the cuts play a huge role... you can taste the difference in quality. :ufdup:

I think tex and KC focus less on the sauce, but i'd put the Carolina's prep and cooking methods up against them all day. Also KC, Memphis and tex really seem to tout their ribs and larger pork cuts more than actual chopped 'cue.

Western NC tops for me. Been to a bunch of the spots in Lexington and none of them were bad.

I don't like raw mustard on anything but if I can't taste it and you coated the meat in it cool.

Gates service sucks but it's still good. Used to live by the one off Linwood. Q39,Jackstack,oklahoma joes are in midtown KC &all three of them are:wow:

I'll be in Kansas City in a few weeks. I'm going to try two places out. Which two in KC should I do?

I'm surprised Georgia isn't in the mix here

but out of those choices Memphis has the best BBQ, usually a nice balance of smoky, tangy (mustard) and sweet.
