Is Spice & Wolf a sequel or a remake? I never saw the original season(s?), but I want to give the series a spin. Is it worth it to start from the older anime, or would I be good starting with the one that started this year?

Watch Grimm Variations Ep 2: Little Red Riding Hood

It was a decent episode. Did felt it was weaker than Cinderella. The execution was very basic. It follows the "Bad Wolf" as he gets his first prey. The Sci-fi world that it provides is interesting, but felt rather unnecessary. Not to mention how one can go from reality and what isn't reality wasn't developed enough. The conclusion felt pretty predictable of the hunter becoming the hunted. This felt more than a Variation is all honestly.

It's a reboot, so you don't need to watch the OG. It covers the same stuff tho from what I understand so far with some minor differences I believe.

I started reading this series with the official translations from Kodansha, and it has a lot of potential. I've heard it gets even better. Considering that Bones is animating it, it should be easily a hit.

Yeah, I really like it. The artwork is unique (makes me thing of great street art), and the setting is cool as hell. I put it down around 30 chapters in, but only to let it build up a few arcs so I can binge-read. The potential felt big for sure.
