I never understood the anime characters don’t look Japanese thing.
Most are obviously Japanese they just have big cartoonish eyes and sometimes weird hair

I do know the hair is to distinguish them better. Plus I like seeing different hair colors.
I assume regarding the eyes bigger eyes I believe is meant to give a younger vibe to characters.
Like in Oshi no Ko. Akane and Kana are both the same age, but Akane has an older look to her while Kana being known as loli-senpai. (Granted in the manga Akane eyes are narrower.)
Also in Goddess Cafe regarding eyes Akane is seen as the mature girl of the cast despite Kiku and Riho being older.

The eye thing comes from the godfather of manga Osamu Tezuka who was inspired by Walt Disney. People probably think if a character has big eyes then surely they can’t be Asian
It’s mostly Shounen and Shoujo that do the huge eyes thing, or if you’re trying to make a cute character which is why Moe characters usually have them. Seinen and Josei character designs are typically more realistic.
