Roasted/Baked chicken

Whole chicken seasoned with:

-Garlic Salt,
-pepper
-paprika
-stuffed with garlic, white onions,red peppers

Place in oven on 375 degreez for 2 hrs or until done. Cover with aluminum foil , baste
Steamed broccli
Brown rice optional ( I don't eat carbs at night after wkouts fyi)

TIL you can make pizza with just yogurt and flour

Greek Yogurt Pizza Crust

1 c Plain Greek Yogurt
1 - 1 1/4 c Self Rising Flour

Preheat the oven to 400 F

Mix the flour into the greek yogurt. Knead for 5 minutes. If the dough is too sticky add a little more flour.

Roll out on a pizza stone, top with toppings of your choice and bake until crust is golden brown.

Quinoa Pizza Bites

Makes ~40 bites
2 cups cooked quinoa
2 large eggs
1 cup chopped onion
1 cup shredded mozzarella cheese
2 tsp minced garlic
1/2 cup fresh basil, chopped
1 cup chopped pepperoni slices (~1/2 of a 7 oz bag)
1/2 tsp seasoning salt
1 tsp paprika
1 tsp dried crushed oregano
pizza sauce for dipping
1. Preheat oven to 350 degrees.
2. Mix together all ingredients, except pizza sauce, in a medium mixing bowl.
3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.
4. Bake for 15-20 minutes.
Nutritional Information for 5 bites per My Fitness Pal: Calories – 175, Fat – 10g, Protein – 9g, Fiber – 2g, Calcium – 10mg, Carbs – 12g

I'm bout to try and make that pineapple portobello mushroom sandwich.

ngredients
Peanut oil, for frying, enough to fill your skillet 1 to 11/2 inches deep
4 round pineapple slices (either fresh or canned), each justover a 1/4-inch thick
Butter, for grilling
4 onion rolls, split, buttered and griddled
1 cup all-purpose flour
3 large eggs, beaten
2 cups panko breadcrumbs
Kosher salt and freshly ground black pepper
4 portobello mushroom caps (about 1 pound), gentlycleaned and gills removed
1/2 cup Japanese mayonnaise (or regular if you can't findit)
4 teaspoons teriyaki sauce
1/2 small red onion, thinly sliced
4 to 8 leaves red leaf lettuce
Directions
Heat the peanut oil to 350 degrees F in a large cast-iron skillet.

Heat a grill pan over medium-high heat. Grill the pineapple slices to get nice grill marks, about 2 minutes per side. Butter and grill the buns as well.

Set up a breading station of flour, eggs and panko seasoned with salt and pepper, in 3 separate shallow dishes. Dredge each mushroom cap in the flour first, then the egg and finally the panko. Fry the breaded mushrooms until golden brown and cooked through, 4 to 5 minutes. Drain on a baking sheet lined with a cooling rack or paper towels.

Whisk together the mayonnaise and teriyaki sauce in a small bowl.

For the sandwich build: Spread some teriyaki mayo on the bottom and top halves of the buns. Top the bottom bun with a pineapple slice, a fried portobello mushroom cap, some onion slices and red lettuce leaf. Oh man!

thats the first thing I though

I was like eew a whole banana in between bread, but then I realized I eat whole bananas all the time and it would probably fit in good in between the bread

Just tried Quinoa in one of Costco's free sample aisles. :blessed:

I'm never buying brown rice again. This is going to be my main carb source from here on out.

@detroitwalt :blessed: you. I just made the most tender chicken breast EVER thanks to your brining suggestion. I will NEVER cook another chicken breast without brining first. (I only did it for about two hours).
