Dang man, sorry to hear. My sales from my main customers (niche food manufacturing) are still holding up but some are dikking around paying me. One tried to push terms out to 90 days and only just paid me for stuff from February. I had a talk about playing with my money is like playing with my emotions. Also suppliers are getting harsher with stopping shipment for even a few days past terms so I can tell it is getting tight for folks. Hopefully my sales keep up since I don't need a hit right now having just bought new equipment.

Speaking of the big distributors, Chef's Warehouse is the big dog in my category and their earnings call was interesting. They are building massive warehouses in FL and I think either SF or Vegas that have not only stocked goods but seafood processing AND center-plate processing like steak cut butchering. They are basically going to have dozens if not hundreds of folks making steak cuts for restaurants to cut out smaller beef distributors and to obsolete the butchers/sous chefs in restaurants that typically handled this from partial/whole cow type portions. I think they are far enough away in FL for you but the small distributors down there are probably shaking.

Chef's has also been on an acquisition spree since COVID buying up a bunch of regional and small distributors including one near me B&K. the market is rapidly consolidating as the small guys lose margin or they (or their kids) are tired of the rat race and just want to sell.

Sysco, US Foods and all of them are doing heavy SKU rationalization too so some other companies are getting straight ejected if they aren't showing fast enough turns/revenue. Combine that with the constant rules and stuff we have to do for FDA and FSMA and a lot of small and medium guys may throw in the towel.

That's another thing I'm contending with..I think at the last round table meeting, I was told we were owed about seven million collectively from all of the customers we currently serve. Getting to a point where I might have to consider restricting C.O.D's on any new accounts and forcing nikkas to be on ACH or apply for terms from the get go for both new and seasoned accounts.

That's interesting about Chef's..US Foods and Sysco have a good hold on that area as well, Sysco I think owns Buckhead Meats and US Foods owns Stockyards. They both process out pretty high quality whole cuts on their end..yeah, that may crush out mid to small regional players and I didn't even mention Cheney Brothers being in the mix as well.

I'm going down to Miami next week because I'm visiting this company down there has a high tech process where they can flash freeze whole fukking tuna loins, halibut and swordfish without it losing any integrity as it thaws out. THAT right there is dangerous for me, these nikkas selling their halibut at $7.50 a lb with no loss in quality, meanwhile I'm offloading mines at $23 a lb out of the ocean. Some of these OG chefs ain't buying it but as meat PERIOD gets more and more expensive, I'm seeing problems down the line.

That shyt is nothing to fukk with..you can only get up close to that shyt with hazmat suits and respirators if it sits out too long. Vibrio infections are also a bytch to shake off if you don't recognize the symptoms quick.
