I ran a cafe in a college town for almost a decade and never saw shyt like this. I had employees from Freshman year through graduation. We were very busy, and we were open from 6:30-1AM. I mean line to the door for 5-6 hours a clip during the day, people packed into the street on Jazz or other live music nights. That first year we opened, I even had a couple of high school seniors on staff. All but a few shifts were 8 hours, and bartender worked longer. Even with all that, I rarely had breakdowns on this level. She should really communicate with her manager about her schedule.
Thirteen employees on a standard coffee shop isn't a terrible crew considering they don't do specialized services (I had charcuterie and cocktails/wine/spirits/beer/live music). I myself had two full time jobs (about 75 hrs a week, though one was a temporary position that lasted about 4 months, and not considering film and audio production work that I never stopped doing on the side for that entire 9.5 year period), and still managed to finish two degrees during that stretch. An eight hour weekend shift should still leave some time for getting work done. The subject of the video doesn't strike me as someone who goes out a lot, though I could be wrong. It's easy to get overwhelmed at that age, so I have some sympathy, but not everything needs to be a massive story.
