It wouldn't have had the same emotional attachment and impact like his last day at ESPN and FT, so I can see why he didn't bother with it.

Nope, they didn’t even say when the show will be back. There was a graphic that said “Undisputed weekdays 9:30 am”, but no show next week according to FS1’s schedule.
I assume FS1 has been auditioning and negotiating with people behind the scenes for months. As they know they'll need a new morning show for football season.

Why would he mention him when he’s on another competitor?
SAS didn’t mention Skip or FS1’s name when Shannon was called him Skip and wouldn’t even mention FS1’s name when mentioned where Skip was going the first go around.

How do you have a finale without mentioning the shows co-host of 7 years. One that you had a public fallout with. Rather than take the high road, Skip opted to just finish an 8 year gig as “just another day”
Because he's on another competitor's show at the same EXACT timeslot. You don't mention other competitors on live television for a reason.
