All of the best moves weren't blocked.
Combo routes weren't dull. It meant you actually had to know how to play the game well enough to where it wasn't the end all/be all of your arsenal. MK1 is far more combo heavy where you can pull of these long 40-60%+ combos and look like a professional, but still lose the match.
Ermac's moveset has several of his moves summoning creatures and even limbs as part of his moveset.
I can't recall, but they took his classic projectile, which he's had since UMK3.
You clearly didn’t play online. Frost, who I’ve mentioned before, didn’t have her little ice box that freezes until late in the games life cycle. Others had similar situations. Variations for ranked left out a lot of characters best moves. Majority of people complained about how dull and uncreative combos were. Most characters had the same strings that you always had to use to lead into damage. Game became un fun to watch and play. Kitana was so fun in 10 but plays like shyt in 11 because they removed shyt like sir fan resets. Ermac still has his telekinesis slam, levitation faints, etc. Just different animations. He’s basically a toned down version of MK X, which can be said for a lot of characters. They even gave the kit of his spectral variation from x to Homelander. He didn’t have a projectile in X either. I don’t count soul ball as one since that was used to reset in combos. I’m maimed Ermac in X and played him in 1.
