And I don't know why she cooks the peppers first. Them shyts cook fast. Cook the greens first then add the green peppers at the end. That's probably why she needs to add hot sauce because she's Indian she overcooked the peppers still they melted into skin.

Ham hocks taste better (because they don't over power the flavor), have more meat and look better than bacon.
