Yeah that broth ain't no joke. I let the stock go for two whole days to get that rich beef flavor.
Went with Philly Cheese Steaks tonight. Never had the real thing but this is my rendition. I used choice cuts of rib eye and cheddar cheese and cheese wiz. And for the side a plain bag of Lays.

the bodegas and pizza shops use cheaper beef and white american cheese, and its ok because you only spending 3-5 bucks and they good as well .
