Made shrimp risotto last night and made way to my much. So I made some Arancini with marinera sauce. If you've never eaten arancini you are missing out. Deep fried risotto is delicious. :jawalrus:

I eyeballed measurements because I only made one chicken breast.

Pound chicken to 1/4 - inch thickness, season with Cajun/Creole seasoning of choice.

Combine pepper jack cheese, spinach, salt and pepper in bowl.

Spoon cheese and spinach mixture onto each chicken breast, roll and fasten seams with toothpicks.

Brush chicken breasts with olive oil and sprinkle with breadcrumbs (I used panko seasoned with a lil cajun seasoning). Make sure to coat both
the topside and underside with breadcrumbs.

Place chicken seam side up on tin foil lined baking sheet. Bake on 350 degrees for 35-40 minutes.

local farm-raised steak marinated in sweet & sour jerk sauce.. homemade vegetable medley(squash, zucchini, red peppers, carrots & red onions) over white rice..

baked marinated chicken breast(homemade Italian), with onions, carrots, garlic & bay leaves over organic Madagascar pink rice..

solid white albacore tuna, carrots, bell peppers and some cayenne pepper is one of the quickest, healthiest things you can eat..

Raw spinach or did you saute it before hand?

Canned spinach?
