Whoever cooked that , they can cook.

Ha I did breh, thanks. Recipe originally called for anchovies but they're too salty for my taste. It's really just an intermediate dish nothing too hard about it. I cook a lot of Italian dishes not too many people know of.

It's not always fancy, I take it easy for lunch. (Actually I could use more ideas for lunch)

Tuna salad in a whole wheat pita with some cheesy puffs.

I Love eating Tuna straight from the can with some boiled eggs, good for you're diet.

that why I didn't cross post this in the gym thread

Speaking of cross posting:

Pecan encrusted salmon with a honey Dijon mustard sauce (not my original recipe, but I made it mine own). I normally eat it with Dijon spinach and low carb pasta (these are collards in the pics though).

1/4 cup honey Dijon mustard
1 tablespoon of honey
2 tablespoons of I can't believe it's not butter

Brush the salmon with the above mixture, sprinkle a mix of bread crumbs & crushed pecans, and bake for 12 minutes at 450.

It is a good idea to make extra sauce and drizzle some on the salmon as soon as you take it out of the oven.

Sauté some spinach with a little Dijon mustard and enjoy (my bf literally loves this recipe. He had me cook two whole salmon within a 3 day period one time).

I wanted a light dinner so I stuffed and rolled some chicken breast with yellow and green zucchini, jalapeno, carrots, and spinach. Seasoned with Olive Oil, Lime Juice, and Dry herbs that I dried out from fresh herbs.

First I grill them

IMAG0167.jpg

Then I finish them in the oven

IMAG0169.jpg

Cut them in half

Add some Muenster Cheese

Slice and serve with Lime Herbed Buttered Rice and sprinkle lightly with lime juice

And of course lunch for tommorow.

Light but very flavorful. :mindblown:

Stuffed chicken breast with mushrooms, onions, and pecorino Romano. Sautéed mushrooms with a little cayenne pepper And baked that big ass sweet potato.
