What is that a flatbread of some sort?

I keep meaning to ask in this thread...what are your best low carb options? I got diagnosed with prediabetes not too long ago.

I was thinking about making a crustless quiche somehow.
Yes it’s just boiled cassava that I mashed and added chopped cilantro and chilli peppers in then rolled flat and fried in a dried pan.

Butter beans or white Lima beans are a good mash potato substitute
Cornmeal cooked with coconut milk is a really filling low carb option
Sweet potato mash
Roasted vegetables
Lentils are an excellent substitute and protein packed
Have you ever roasted a cabbage yum
Savoury oatmeal

I just bought some Arepas, those will also be a good substitute.
I would go for a lot of whole foods by that I mean 1 ingredient unprocessed.
Like whole grains such as bulgar wheat, buckwheat or even cous cous.
Yams ( not sweet potato)
Whole plantain etc, as I think of them I’ll come back to the thread. Some of these things are just thing u can just pop in the oven or air fryer with very little prep

Made a wrap with left over cassava flat bread, crispy, spicy chicken strips, beets, cottage and feta cheese, roasted plantain and butternut squash, topped with salad and mango chutney
@Skooby this was my lunch/breakfast today, low carb and has held me for 10 hours. It was soo good. It hit all the notes, crispy chicken, soft flat bread, earthy beets, sweet butternut squash and plantain, creamy cottage cheese, tangy feta, refreshing salad, complex sweet mango chutney

ETA: it wasn’t that big either, that’s just an average size dinner plate and I only had the one wrap.
