That’s a nice char on that steak. How did you finish it off?

I smoked it for 3 hours to an internal temp of 140F then pan fried it on both sides till a crust developed.

I used coarse corn meal, which I boiled with onion powder, garlic powder, paprika and a pinch of salt. When it was cooked, I poured it into a tray lined with baking paper, let it cool to room temp then let it set in the fridge. After it was set, I turned it out on the cutting board sliced it into fries then put them to crisp up in the air fryer. I don’t have exact measurements but that’s the method.
