Im still trying to perfect my smoke game. Some people say to soak the wood first. Some say not to. The last time I smoked chicken it came out good tho but coulda been better. I think I didn't use enough coal as my heat base

boy scouts 101, do not use wet wood. not for camp fires, not for arson, not for grilling.

Duuuuuvaaaaal!!
I had this baby built a few months ago.
BiBnneG.jpg

125 gallons of iron. I can put 6 slabs of ribs on it easy. I added a BBQGuru to it for temp control. That thing is :salute: I use Royal oak (via 2 chimney starters) to get the fire started and temp up, then use wood splits to maintain temp and add flavor. I had a full cord of 50% hickory/50% cherry delivered to the house last weekend. So for my last two cooks I hit the meat with hickory during the first half of the smoke, then top it off with Cherry for the last half. Dat flavor profile.....:ohlawd:

Everyone should take the time to learn how to properly grill some pork. It takes a while to cook but the finished product is worth it. I have my ribs and pulled pork down to a science now. If you are going to try ribs look into the 3-2-1 method for the best results. Here are a few pictures from the last few weeks.

I wish I knew how to grill :mjcry:
You're never too old to learn. In my experiences people tend to undercook the food than overcook it to where its inedible. I remember the first few time myself or friends tried grilling, it was more opening the grill and flippin meat (n/h) and pokin a thousand holes in it trying to see if it was well done and all that, when as you learn you just "let that shyt cook" (literally)

If you live alone it kind of sucks to burn up some coals for just one steak, but I'll cook up a pack of 10 chicken thighs and eat 2-4 a day until they are gone. I haven't yet but ive considered doin a whole chicken on the grill and just mobbin on chicken for a week. Beef (in my opinion) dont hold over too well, I wouldnt do some steaks and put them in the fridge and reheat them, pork chops though :leon:

They got little ass grills at walmart for $20-$30 The weber smokey joe. The only difference is size and ease of clean up (some have a dust pan, some have a dust bucket)

Smoking is addictive breh :pachaha: fukk around one time and smell the hickory, mesquite or my favorite whiskey wood/chips your gonna end up going through your phone calling people you aint talked to in years talkin bout "come over, im havin a lil cookout, bring $5 and or something to drink"

brats-on-the-grill.jpg

My nikkas, lets talk Brats! (n/h)

My boy cooked up some brats yesterday said he had people buggin askin "What kind are these?" "What did you do to these?" "These are really good!"

I'ma just post the recipe, ima try it for myself maybe later this week or next.

Pack of Plain Brats- no flavored ones (ie, not beer brats, cheese brats etc)
1 onion
1 beer
1/2 cup of water

Put the brats in a pot, pour the beer (he used bud light) in the pot, put the half cup of water in the pot, chop up the onions and put them in, cook on med to high heat for approx 10 to 15 mins

He had 15 to 20 brats in one pot so they did not cook through, and you dont want them too. He said he opened one up and there was some pink in the middle, but that was his plan because he wanted to grill them. I imagine if your doing 6 brats or 8 however many come into a package it'll have the cooking instructions on them, whatever you do just make sure you dont cook them (to completion) on the stove.

From the point where they have been immersed in the beer, onion and water for about 10-15 and have swollen up a lil but still have some pink in the middle, cook them on the grill to completion.

My boy said he isnt too big on brats anyway but when you have people over its good to have the variety (burgers, brats, chicken) and he's been told some different stuff like cook brats in beer, and he knows from cooking how onions and enhance flavor so he just merged the two things together. And he said they were a hit.

Like I said i'll try it out either later this week or next. If one of ya'll try it, please let me know.

I imagine a regular brat that absorbed beer would be as good if not possibly better than a store bought beer brat. I'll end up trying both at some point so i'll test my hypothesis. I prefer italian sausages over brats. Put that on a hoagie roll/bun....:wow: or add peppers....:damn:
