Usually go with medium, but I might also have to venture into medium rare :ahh:

i don't really eat much meat, but when I do.. because I'm paranoid about e-coli.. I cook any type of meat (except bacon) for myself well over.. esp chicken.

Well you're smart to cook your chicken that way. That and turkey are really the only things I can think of that need to be cooked well done. Everything else, medium rare! Except pork, I do my pork medium to medium-well.

Anthony Bourdain in his book writes that when you order a well-done steak in a restaurant, you're basically getting the poorest quality of that cut of meat they have in the kitchen. Logic being, is that customers won't know the difference in the quality of the meat because it's cooked to oblivion.

So you when you order a well done steak, you're buying a piece of shyt meat they've been waiting to serve to some sucka:pachaha:

A friend of mine in the restaurant business told me once that they keep a couple steaks in a warming drawer for up to 3 hours waiting for some dumb schmuck to order a well-done steak.

I've read in here over the years about people having well done steak and tbh, till I was about 15 I did too, then I realised it was quite crap And got it medium, sometimes medium rare, just wondering have you ever tried a lightly done steak?

I'll let Gordon Ramsey tell it.

This is why cooking good steak is a talent. I pretty much only f*cks with carne asada, carne seca, shishkabobs, shawarma, or churrasco. The problem with the Porterhouses and sh*t like is that they're these big slabs of meat. Of course if you want the inside cooked, you have to burn the outside. You can still enjoy your meat without having it overcooked, but it can't be a f*ckin' 10 lb slab of meat :skip:
