The brain remembers and can subconsciously log shyt you're unaware of.

I suggest you read into criticisms of those NDE anecdotes. EVERY SINGLE ONE i've ever read had massive flaws and leaps in logic that merely and ultimately rested on what the person who claimed to have the NDE claimed to have experienced.but the information described was exact and there was no way for the person to know it. I repeat no way. We're not talking about regular people that were stunned... we 're talking about doctors, surgeons, etc. People who believe in only shyt that they can measure. In the words of kanye " you don't have all the answers"

Define consciousness
Awareness? Well thats "easy" to explain.
Consciousness may be nothing more than enhanced pattern recognition.
Not just awareness but the ability to control that awareness of self and environment, at the human level. Not easy to explain how that arises.
There were no other alternative explanations to begin with, if someone had one, I'd think on it like I do everything else.1. what happened?

why wasn't it a memory of your mother getting ready for work and a dream/hallucination of her prepping food for your brother?There were no other alternative explanations to begin with, if someone had one, I'd think on it like I do everything else.
What happened was: I "woke" up and went into the kitchen and watched my mom, in her work uniform, make my younger brother a grilled cheese sandwich before school.
Now I had no knowledge that a) my mom cooked my brother anything before school since being away in college b)if my mother had to work that day or not (her schedule isn't always the same week by week)
So I "stood" there, watched him eat, and followed him to the garbage can. He threw away the sandwich and I went deeper into the trash can until there was nothingness. I then woke up in my bed, confused because I thought I was already awake. When I went into the kitchen, the skillet and spatula were still on the stove. I wen downstairs to ask my other brother if mom went to work and he said yeah. When my younger brother came home, I asked if he ate a grilled cheese this morning and he said yeah. shyt left me , so if that wasn't an OOBE then please tell me what that was because I still don't know to this day.

A unified theory of consciousness is not explain already bruh. There isn't a theory that explain how we not only are aware but also have the mental propensities that we do. Stimulating and lesioning certain areas do have 1 : 1 relationships at the anatomy/perceptual level but not all aspects of perception have an area that can be chalked up to anatomy. You already know this though but you like to hear yourself talk.
