I just came in here to post this aswell.
Lamb is delicious. I havent read any of the lamb hate yet in this thread but yall are missing out.
I stuffed the meat with fresh rosemary, thyme and garlic and marinated it in onion powder,garlic powder, paprika,black pepper and a lil salt with some dried rosemary powder.
I smoked the belly and the shoulder for 6 hours over a low flame and glazed with apple sauce periodically.
Served with roasted garlic mash slow cooked lamb gravy and sauteed broccolini with chillis and black sesame seeds.
The gameyness of lamb in taste is not that strong. Its a delicate meat so needs more fragile treament that you would a steak. Treat it properky and you wont regret it.
