What do people think is going on with the hotel manager? She seems perpetually annoyed but they aren't letting us know why.

Her staff don't listen to her. At the first episode when the guests arrived, the staff had like 2 glasses of wine. When you have multiple guests arriving why the hell would you bring a tray that's meant for 2.
When she asks them specific questions about shyt they should know, they're dumbfounded.
She can't enjoy a coffee in peace without a Guido trying to spit his stale, weak game at her when she's clearly in no mood.
I suspect she's going to kill one of the guests or the employees. Someone's going to push her too far and she'll neglect an important detail which will lead to someone's death.

I dunno she seems unreasonable. Even when her underling was complimenting her she either didn't like it or it made her uncomfortable.
Also, she seemed to care too much about a guest wanting to have whores be able to come to his room. Like isn't that like a regular thing at hotels? Especially swanky ones. I can't believe that's the first time she ever encountered that.

She showed that she was softening up when the girl was complimenting her. You can see that she's realizing that she was being too hard on the girl. She doesn't want to run her out of the hospitality business but wants to be tough to let her know this is a job where you're responsible for millions of dollars in business.
She doesn't trust the escorts because she KNOWS that they're a security risk. They could be connected to organized crime, they could snap photos of the guests and violate their privacy for clout, they could steal, and they could bring drugs into the hotel. The fukkkery has been ramping up ever since she let those escorts in. They've smashed two of the guests already, and they've brought in drugs. So far she's being proven right. Those girls could be in danger too, because men with money will go through any lengths for discretion.

Fam, on the real, Albie really does look like some closet, copycat killer Dexter Morgan would bump into mid-season.
And Portia isn’t anything to be down over tbh. Girl constantly complains, is depressed, and wanders around a grand resort not knowing what she really wants. The lack of self-awareness between the two characters makes it hard for me to pull for them, but I also can’t stop watching. If they venture down the route that I think they’re going to go, then cool, but her character is just as “ain’t shyt” as the rest of the cast, lol.

She might OD on some pills or fall off a cliff but I'm 65% sure she's not going to make it.
I think she'll play albie, he'll go cold on her. She'll fall into a depression and then keep trying to call him. He'll tell her to fukk off and she'll kill herself.
Then his pops and grandad will console him and tell him "no matter what u do, if a woman's unhappy you can't change that shyt. And when he says it Dominc will have that wee bay moment and realize he needs to let his ex wife go. He'll make peace with the fact that things can never go back to what they were.
