I'd say either Rope, Psycho or Frenzy.

Saboteur has some nice scenes in it too.

edit: Can't forget Dial M for Murder.

True, the role required Cary.

Sidenote:
"The Philadelphia Story" is a great James Stewart / Cary Grant Flick

Cary Grant's has some of my favorite swagged out moments in cinema in this joint. He and Katharine Hepburn clowned through the whole movie lol

Shadow of a Doubt is probably my favorite Hitchcock movie along with Strangers on a Train.

The Trouble with Harry is a great anti-Hitchcock film, laughed my ass off first time i saw it.

Chi-Town!
I always loved "The Birds" and watched it quite a bit when I was kid, but I haven't seen it in years. I plan on seeing "Rear Window" because it has James Stewart in it and he's one of my favorite actors.

Rope is actually 10 shots I believe. He wanted to make it fewer, but film technology at the time limited him to like 20 minutes at a time....but he masked a lot of them by panning past an object on the screen and cutting there.

Great film though
This is how he did the Psycho shower scene.

This ADD generation could never appreciate Hitchcock.
