Gemini makes you wait like a week before you can withdraw ETH.

But when you're able to do that, you go here...
Transfer Funds > Withdraw From Exchange

On that page it'll have a text box asking for the Destination Address. That's where you enter in the Kucoin or Crypthopia address that you're depositing your ETH to.

Nope, volume on Kucoin isn't what it was last month, all their coins are suffering. Once Binance opened up registrations again Kucoin fell off hard.
