Just anything outside the characters of the main episodes would be interesting. The universe is gigantic we don't need to focus on the same 10 characters.

Han Solo is the ONLY character from the original Star Wars movies whose origin story I would watch.
It's the fanbase, they've boxed the franchise in and don't even know it, they don't want need ideas, just rehashes and initiations with slight alterations (The Force Awakens) to feed their nostalgia. Star Wars will never grow if it's trapped in a loop. When Lucas came in with new ideas and concepts (prequels, which have now been blackballed/ignored along with it's elements) they said "it's not Star Wars". Now we're back to the force and Jedi being myths like at the start of the original

If you are questioning a Han movie, watch the Ep IV again. Han has done some dirt, you know Han had the ladies and Han and Chewie background story would be interesting. A Han movie would basically be that underground Star Wars movie everyone is looking for. All the smugglers, pirates and bounty hunters with the occassional Imperial entanglement. Rumors also that he is a former Stormtrooper deserter like Finn. Force users are cool, but there is a lot of plot here.
Palpatine would NOT be an interesting movie. The Plagieus stuff maybe, but remember he was coming up during a down time for the darkside.
Yoda lived way too damn long. TV series might be better for that. Mainly about when he was much younger.
R2-D2 and C-3POs origins are already known and not interesting. R2 was a Nabooian astromech during a time of peace. 3PO was built by anakin when he was a kid slave.
