Internal temp is safe and that juicy layer of pink in the middle. It's tender af. The juices are brown not bloody.
Got it down to science when throwing Ribeyes on the grill, temp at around 500 at 1:15 each side....take em off. I slightly drench in olive oil sprinkle some cracked pepper/himalayan sea salt on....toss em under the broiler at 350 for the finish. Rest and serve.
