Since we're talking lore...
Another interesting fact about the difference between the Jedi and the Sith is their viewpoints towards and usage of the force. The Jedi believe that the force should simply flow through them, they are to completely give themselves to it and even during lightsaber battles are not supposed to really be in control of their own actions. If they get got, they get got....

In one of the shytty prequel movies, Anakin is using the force to feed his bytch (This simp right here!), he says something like
"If Obi-Wan saw this he'd rape me"....it's because he's not supposed to be using the force all willy nilly.
Sith believe in controlling the force, manipulating it to their own ends, using their emotion to drive their mental and physical to the limit. This is what makes the dark path "easier and quicker". It's also what makes it so tempting. Jedi have to be careful in their manipulation of the force, if they go to deep in that well, they can't come back (Until Vader Da Gawd did it in Return

).
All of this affects their mentalities, and everything they do.
