Finished all the episodes in season 1 and I love this show. Something about Darlene and her friend Bernice who was in power 
It may just be me but wow.
The show had great charters, great writing, and was shot very well.
My only small quarrel with this was the way they did Ruby in the last episode. shyt was too extreme and a little unrealistic, I thought her character was cool.
I also wondered about the whole check thing they were doing in the beginning and it wasn't really clear to me the first time I watched it. I will have to watch the show again at some point.
All in all great show though!

I think they were forcing each worker to give them a cut of every paycheck, in return for the "convenience" of giving them cash without having to make a trip to the bank.

From what I gathered the workers went to them to get their paycheck cashed and they were given Cash in exchange for the check with the cash being supplied by the mafia. If the mafia was paying the workers salaries out in cash in this way and only being paid a convenience fee in return how were they able to make profit off of it is my question. Did they then cash the checks too or is there a part of the story I missed

It's the Mafia. The "Convienience Fee" is at loan-shark level rates.

I think I might see your confusion. The initial check is a legit corporate paycheck, not coming from Mafia money. The Mafia is forcing them to hand over their whole paycheck on the spot and giving them back some cash, with a big cut taken out of it.
