as far as Premo vs Al, i mean its close as hell but i like that Al never is afraid to experiment. Premier has played it safe for 10 years for no apparent reason, he does the same thing all the time. his sound is unique and legendary, but he never leaves his comfort zone. that my only knock on the guy

I picked Just Blaze.. Because I don't think he's even reached his full potential but has still produced great tracks from radio friendly to underground to straight up street shyt. He can also go from epic to simple and still sound at home on the boards.
On another note.. don't see how anyone can say Alchemist is just simply a "beatmaker" in comparance to Kanye West. He's just as much (if not more) of an actual producer than Ye is.. The difference being Alchemist doesn't experiment as much and seek out producers/instrumentalist like Mike Dean or Jon Brion to do his work for him. He sticks to what he knows best.. chopped samples and loops. Just because his overall style of production seems a bit more "simple" than Kanye's doesn't mean he's a beatmaker.
