Because it's easy to classify these sort of justifications as stretches and illogical conclusions - which they are. Malala wasn't arguing against Shariah, she just wanted girls to be able to go to school and have access to education beyond just Quranic education. But according to the Taliban's interpretation of Shariah (which is influenced further by their strongly patriarchal culture), girls are not supposed to be allowed to leave the house to gain non-Quranic education and be taught a secular education. Moderate Muslims do not subscribe to that interpretation so they don't take their reasoning seriously. They will cite stories of how some of the prophet's wives were literate and would sometimes accompany him to battles and meetings to assist in treaties etc.

Of course, they will ignore the violence perpetrated against women, looting of caravans and collective punishment handed out to tribes for retribution in the post-Meccan period because Islam was under attack from all sides and had to do what need to be done in order to survive and spread god's word etc. They will be consoled with all the peaceful messages in the Quran from the Meccan period (when the prophet had no power and had to pitch to prospective converts accordingly).
