I think the problem with the Untold episode is that it was positioned as being the final and definitive word on the event, and parts of the audience and the production company had two different ideas on what that was supposed to mean. Some people were expecting it to make a larger statement about how race and sports fandom intersect, along with the role the media plays within that. But it feels like the production goal was really more to clear the names of those involved in the fight by giving context on who they are, and what lead up to it. This is definitely less of a case of athletes maybe having too much agency in how their story is told (although if we're being honest, there is something to be said about how an autobiographical work will likely lack external context to truly be definitive), and more a case of mismanaged expectations.
The one thing that I do agree with is that if they knew they were going to run at about an hour or so, the section going into Jermaine O'Neal's life story probably isn't needed. But when you look at it as this really being Jermaine's story more than anything else, it makes sense why it's there.
I'd also argue that the recap of then recent Pacers history probably doesn't need to be as long as it was. Considering that the payoff was just a couple of single lines from Reggie Miller that culminate in them wondering how a cop didn't know who he was. Outside of establishing that these were the two best teams in the East meeting up again after a tough playoff series, it doesn't really return enough on its runtime investment.
Matter of fact, if this was titled instead Untold: 03-04 Pacers, or Untold: Jermaine O'Neal, there's probably less pushback.
