when u get to real steak options (porterhouse, ribeye, filet, ny strip, etc) you’ll appreciate the difference even more
Generally speaking, steaks come from the middle of the cow. Around or under the spine/rib cage. Tender parts that don’t move all day and toughen up like a shoulder would.

The baste is mostly why it charred like that..... it can be good or bad depending on your taste
