Also a $20 meat thermometer would go a long way to take the guess work out!

:noah::ohlawd: gonna grill this sucka up nice with some terriyaki honey sauce and just baste and flip it over I hope it comes out good

Be careful with the honey, the sugars will caramelize before the meat cooks, you may want to try adding that towards the end and baste with honey towards the end. Post pics when ur done! Good Luck

I made roast beef on sunday, so I thinly sliced the left overs and made a beef sandwich with caramelized onions,English mustard, and some mozzarella and cheddar. Then I dipped it in the leftover beef and redwine gravy reduction that I made. I added a but of water to thin it out to make a jus.

How do you make your jerk chicken? I love jerk and I've tried to make it a bunch of different ways and I can never get it right.
Cook it on a rack. Spatchcock the chicken or only cook a half.

Season that bird, throw it on the oven on 450 for bout 60min to 70min. Then broil for a quick minute or two depending on browness and crispness of skin. (Some say 500 for 45 minutes..I havent tried that yet though. I'm do that on a smoker or grill tho).

Let it rest then chop chop. You'll perfect your technique over time.

Just be careful if you use a Jerk Marinade because the sugars will burn at that temp. I used a Jerk Dry rub and complement it with marinade.
