its only tuesday and i said to myself dont get take-out during weekdays but theres no meats in the fridge and i am too tired to go out and get some produce. been working since like 5am this morning.

i'll drop pics.
Yeah this is me. I love to cook but I get to work at 5:30am and don't get home until around 4. I don't really feel like cooking especially if I didn't take nothing out.

Due to the coronavirus, imma start cooking my own Chinese food.

Recommend me a carbon steel wok yall

You're rarely gonna find a good one outside of ordering off amazon or heading to the asian market.

Don't get one that advertises ANY kind of "non-stick coating". None of those shyts are made the hold up under high heat, that includes stuff like T-Fal,which I would recommend for anything else lol. The high heat makes non-stick coating peel right off, and after 3 or 4 uses you won't be able to cook an egg in it, no less rice.

Go grab a joyce chen. They're like 50 bucks.

We bout to eat!!! Chinese duck wraps with the left overs from yesterdays dinner. My future husband better work out cos we will be feasting regularly. These were delicious.

With that said, I learnt alot about duck; this being my first time cooking it. I put all the love I would usually into this meal, but it was particularly arduous as it is very fatty and the skin is quite thick. The smell of it really put me off, I cant explain it, it wasnt gamey but it was very distinct.

Secondly, the anatomy was different to what I'm used to. There was all kinds of bones and sinews that I wasnt expecting as I'm used to chicken. The bones and cartilage were very dense and not as hollow as chicken is. So for any body doing this you will need an incredibly sharp knife.

For more than 2 people you will need quite a large bird as there is alot of bone. So consider that when buying duck and presumably goose.

All in all whilst I enjoyed the duck wraps, this is not a meal I will be doing again in a hurry.

Today I made Gyoza for the first time. My folding skills are crap so I gave up after a while
Z3yLObW.jpg

Pork mince, diced mushroom, Chile pepper, spring onion, grated ginger, crushed garlic, chopped coriander/cilantro and chopped cabbage. I also added, garlic powder, onion powder, maggi liquid seasoning and soy sauce

Mix it all up

I used a teaspoon to drop them in the wraps. These were the pancakes I used for the duck a few weeks ago. I wetted the edges with water and folded over squeezing all the air out to seal them.

Shallow fried them in vegetable oil, the steamed them by dropping a little water in the pan then covering.

I'm never buying these again. You can make these in advance and freeze them. Next time I'll make them with my 7 year old cousin. He loves to eat them, he may as well learn to make them.

Good post. I never thought about making these on my own.

Good post. I never thought about making these on my own.

The whole thing can be made in advance, the meat mix can be made and frozen, or you can make the whole thing and freeze on a tray before transferring to a ziplock bag. Hopefully your folding skills are better than mine.
