Buffalo Chicken Dip
Perfect Buffalo Chicken Dip Recipe

Using the skin as chicken cracklings; as a topper is the best part,

I just wing it w the other two recipes.

Poppers -
- Cut the peppers in half lengthwise and scrape out all the seeds. (if you want it spicy, save the seed and mix in w the cream cheese)
- spoon cream cheese in to the pepper cavity
- melt some butter and mix in bread crumbs until well coated
- mix bread crumbs in w chorizo
- add chorizo bread crumb mixture over the cream cheese
- cook in 350 degree oven until chorizo is fully cooked.


Mac in Cheese bowls
- Mac n cheese whoever you want to make it. I dont really bother making a really nice mac n cheese for this. Just something easy and basic
- Take bacon or prosciutto and press into muffin tins
- Bake at 375 bacon in the muffin tins until almost done.
- Take out the muffin tin out of the oven and spoon in the mac in cheese
- put back in the oven until it the bacon and top of the mac crisps up.

Orange Sesame Chicken

far greater majority of folks use these things to zest oranges and lemons, grate garlic/ginger... don't bother

instead, use a vegetable/potato peeler to strip it all the way down. Then I just throw it in a spice grinder. Save a few strips for garnish

half a cup of sugar

half a cup orange juice, half a cup chicken stock, let it reduce by half

add some soy sauce, the juice from an orange, either 1/2 cup of rice vinegar or 1/4 cup of white vinegar, tablespoon of corn starch+tablespoon of water to thicken it up and some sesame oil to make it glossy. If you happen to have this stuff called orange water, use it instead of water with the corn starch. It'll put this dish on a level no chinese restaurant can ever, ever hope to touch.

throw your chicken in there. It doesn't have to be fried chicken.

plate it up and kick it out. Garnish with the strips of orange zest I said to not grind up and possibly some green onions. Tupperware cause I made this for somebody else.


*if you wanna get fancy and make, say, Duck L'Orange for a date or your S/O, you can use Grand Manier instead of vinegar and butter instead of sesame oil and just spoon the sauce over the duck
