There's more complex analysis tools which even allow you to use midi annotation layers over the frequency spectrum.

If you want to go that deep...download Sonic Visualiser...

Nothing beats having good enough relative pitch to just find the notes though by playing along on your instrument of choice.

Do you guys ever use a Scale with more than 7 notes?
I heard 90% of western music is made with this way though.

There is no such thing.
A scale consists of seven notes.
Either you misheard that person or they don't know what they're talking about.

Let me amend that, breh
What that person was saying or meant to say is that Western popular music, we use the seven note scale.
Occasionally. we also use a five note scale called the pentatonic scale.
The lead guitar part of My Girl by The Temptations is a major pentatonic scale.
We also have a six note scale called the Blues scale.
But again, we only use those once in a while.
There are a bunch of other super nerd scales that are out there to find if you want.
But for the intents and purposes of standard popular music in the contemporary Western world, we use the seven note scale most of the time.

Yeah, i think you will hear what notes out of 12 will sound good with your sample.
Whether it's 7 or 8 notes that make the scale.
I have never sampled a song that had a scale that included more than 8 notes besides some rare jazz stuff though.

Check this free Analyser..

It gives you note values...

So even in the full spectrum of a song you can check the bass peaks ...write them down and you'll already have an idea of what key it's in and the progression.

If you use FL

You can use the Wave Candy Spectogram and up the resolution and hover over the notes and it will read out the note value as the song plays...

shyt you can even use filters to section of a frequency range so that it only reads out that ....so low pass heavy and you will only see the bass notes..etc..

Only for FL?

Anything similar I can use in studio one?

The one I mentioned Sonic Visualizer is extremely powerful and has other features like tempo mapping etc and it's free... Only thing is it's a standalone program...
