How have I not seen this thread before? I'm making some bbq pork ribs this weekend and I wanted to make my own sauce on the smoker. I will be smoking over hickory wood and charcoal. I'm struggling to find an authentic bbq sauce recipe, they're all "quick and easy" or shop bought. Any tips for homemade?

I will be using tomato sauce
water
brown sugar
mustard powder
paprika
molasses

Am I supposed to add a paste of fresh onion, garlic or ginger and let it cook or do i use the dried powdered versions? Can I use both?

Do I cook the ingredients together on the stove first to bring the ingredients together, then put it on the smoker?

Any tips would be welcome?

I will bump later when u guys are awake.

It's been said not too long before your post but don't use lighter fluid or pretreated charcoal.

Just newspaper or the shyt they sell in the stores like little cubes that stay lit or the pieces of hay or whatever.

You've probably never burned garbage or anything chemical, like bleach, alcohol, gasoline but the chemical is in the vapors. You can taste that shyt on your food. You don't want that shyt in your body.

For all my brehs who lives in an apartment and can’t grill, get the Philips smokeless odorless grill.

this shyt was a lifesaver and quick tip to get that charcoal taste. I’ll give a lil secret lol after grilling, put the meat or whatever you grilled in a container, lit one charcoal on the stove, get it real hot. Then put it in the same container of the meat, in the middle but make sure you put it on top on something that’s not going to melt ( I use a metal shot glass with aluminum foil covering the top ) and then pour a little bit of Oliver oil on top of the coal. Cover the container with it’s lid and let it smoke for about 30-45 seconds and then take out the coal. The meat will have that charcoal taste and texture, or atleast the closet thing to it.

You can make the sauce however you want really. There's no wrong or right way to do it, you just gotta experiment.

I don't do pork. But I have a really nice food processor. If I grinded up some onion and garlic and added it to some vinegar, ketchup, and maybe a Lil molasses. It could turn out piff :manny:

Yessir! my old apartments, you weren’t allowed to grill. They even took the grills out at the pool section :mjlol:.

I had a George Foreman grill but them shyts was wack to me, but I copped one of those cheap foldable Walmart grills that has the wheels on the bottom and used to go to the park and grill.

When I finally got my house, the wifey copped me a 22inch premium Weber grill and it’s been on every weekend :wow:.

When it's nice I'm usually on the grill a few times a week (mon-fri) Usually on Saturday or Sunday the family gets together and I do something big or a lot of stuff. Anytime there's an occasion they usually ask me to grill.

Even in the winter months I do some briskets.

It's fun to do. Sometimes exhausting and even though sometimes it costs more and I spend more time than just running out to grab a burger, the quality is always better, therefore worth it. It's easier for me to grab some whole chickens and throw them in the deep freeze, season them and throw them on the grill then go to Popeyes or Kfc.
