Eh, I still think Frieza's new transformation is lame.
And I think there's too much power inflation to continue the series. Not to mention the characters were kinda old by the end of the series (Goku being a grandpa and all). If anything I'd like to see a Dragonball reboot that starts all the way from the Saiyan Saga (or maybe earlier) and fixes some of the flaws the series had. Like giving humans/Piccolo more time to shine, not making Saiyans quite so overpowered, making Raditz a more important character (he is Goku's brother), having Gohan do more, not being able to wish people back so easily, etc.
I also once wanted a reboot to fix some of the flaws of the progression of the story and some of the characters. I can easily argue both ways but I can perfectly see why they wouldn't. Now to speak on your power inflation concern, I too believe the power was getting a little out of hand. But we do know for a fact Toriyama is trying to fix this. With these new movies Toriyama is trying to redefine what "power" really is, or at least what it is moving forward.
In Battle of Gods, Goku couldn't even touch Beerus until he attained SSJG. Vegeta was able to but I believe its only because there is something that connects Vegeta to the original SSJG that we may get more information on in future movies. Basically what I'm saying is that from now on, power is going to be measured on a different scale than before. I don't believe its a coincidence that Toriyama has just introduced us to 2 different realms/factions and i'm surprised nobody has really seemed to notice it yet.
We've gotten a hint/peek at the God Realm and the Demon Realm. If you've played Xenoverse you'd know that they have introduced a character named Demigra who they refer to him as a Demon God. Which kind of opens of the pandora's box of possibilities that can spawn from that.
But can you kinda see where the series might be going now? Mere mortals Goku and Vegeta, fighting amongst Gods and Demons!
Now I know it seems crazy and not very DBZish but it does seem like a logical step in progressing the story and fleshing out the world with the information they have given us so far.
I'll give an example of another anime so it may seem a little more clearer.
BLEACH.
Goku/Vegeta = Ichigo
Soul Society/Hueco Mundo = God Realm/Demon Realm
Ichigo couldn't even stand next to a Soul Reaper until he was able to become one. Same as SSJ3 Goku vs Beerus until he gained SSJG.
Ichigo's enemies and allies were baffled by the fact that a human could be that powerful and not even be a full Soul Reaper. Goku and Vegeta are special, they are no ordinary Saiyans and we know that from what we have seen from the series. If there is a challenge these guys can rise to take it. That's why I think these two will do things that enemies/allies from both the God and Demon Realms would think impossible, especially for mortals.
Goku got a taste of SSJG.... now I don't think Goku is either "The God" or "A God" he just got a feel for the power because remember it doesn't last forever. But I believe the story is going to focus on Goku and Vegeta as comrades reaching new levels of the power of the Gods in order to defeat a threat we haven't seen yet.
This would also fix the power inflation and remove the need to go SSJ.
I honestly think these movies and even Xenoverse is Toriyama "rebooting" this series and giving it a brand new arc and something we haven't really seen before in DBZ.
