Soak the chips in water for 30, then get some super duty aluminum foil and wrap the chips in that. Throw the packet over the coals. That's for slow smoking. 250-300 degrees.
Also, I personally only smoke the first 30-45mins
Anything higher temps, buy wood blocks.
I do ribs slow. Slow cook bbq is only done with wood at my house.Even kingsford is much bettter than a gas grill flavor wise. You can control the temp better, you can cook indirectly with charcoal.
